Pickled sardines

Today we brought you one of Grandma Rosa's special recipes, pickled sardines a recipe as delicious as easy to prepare. Grandma Rosa's recommend cooking it at least one day before eating it, so the sardines will absorb all the flavour.

For around 1/2 kilo (17 oz) of sardines we use:
  • Salt
  • Flour
  • Olive oil
  • Bay leaf
  • Saffron
  • Ground pepper
  • 3 garlic cloves
  • 1 clove
  • Cumin
  • Vinegar
  • Water

Ingredients

First add a pinch of salt to the sardines, flour and fry them with olive oil. Once fried put them on a casserole (or a bowl).
Use a mortar and pestle to crash the garlic, the ground pepper, the clove and the cumin, and then add all of it crashed to the bowl with the sardines already fried. Also add 1 bay leaf, a little saffron, a splash of olive oil (prefereably from the oil where the sardines where fired) and a splash of vinegar.

Ingredients

Next cover it with water and add another pinch of salt, shake the bowl and taste. If necessary add salt and/or vinegar to taste. Once it's ready let it rest for a day.

Today we used sardines, but this same recipe can be used on other kinds of fish like Anchovy or Mackerel.
