Rabbit in tomato sauce

Rabbit is one of the most common wild foods in Spain, and this recipe will show you one of the tastiest ways to cook it Almería style. This recipe is really simple and the result is just amazing.

The necessary ingredients for 4 people approximately would be:
  • 1 rabbit in pieces (around 1.200 gr - 42oz)
  • 1,5 kg -53 oz plum tomatoes
  • 2 Italian green peppers
  • Olive oil
  • Salt

First, start by blending the plum tomatoes. Also, slice the peppers like in the picture:

In a big frying pan (something like the one on the picture) cover the bottom of the pan with olive oil, enough to fry the rabbit but not too much. Put it over medium-high heat. Put salt on the rabbit and once the oil is hot add the rabbit to the pan.
Stir the rabbit until golden-brown. Then add the pepper and give it a good stir.

Once the peppers get soft add the tomato. Once the sauce starts boiling turn down the heat to medium-low and stir it occasionally. It wil be ready in 20-30 minutes, taste it and add salt if necessary. If the tomato is too bitter we can add a spoon of sugar.
