This week's recipe will show you a great Spanish way of cooking liver with fries/chips. For 4 people we'll need:
- 1 Lamb liver or aprox. 3/4 of one pork liver
- 1 Italian green pepper
- 2 ripe tomatoes
- Ground pepper
- 1 Bay leaf
- 1 Clove
- 2 or 3 garlic cloves
- 1 Dried red pepper (optional)
- Saffron powder (or food coloring)
- Water
- Cooking oil
- Salt
- Potatoes

Start preparing the ingredients: chop the liver in small pieces, slice the green pepper in small strips and peel and chop the tomatoes. Also peel the potatoes, sliced them thick and fry them. Once fried set aside.
Once all the ingredients are prepared add the cooking oil (enough to cover the liver) on a deep frying pan and set to medium-high heat. If we have dried red pepper add it now to the pan and, once slightly fried, set aside.
Now add the chopped liver and the bay leaf to the pan.

Once the liver is fried add the green pepper and wait until the pepper is cooked, then add the chopped tomatoes. Give it a good stir and cook until the tomato turns into a sauce.
While the tomato is being cooked, using a mortar and pestle smash 2 or 3 peeled garlic cloves, some ground pepper (to taste), the previously fried dried red pepper and 1 clove. Smash it all together and add it to the pan.
Stir it again and add the water (around half liter). Tip: you can use the mortar to add the water so it will take all its taste.
Add salt to taste and a bit of saffron powder. Once the water starts boiling add the fries.
