To cook a paella for 4-6 people you will need:
- 1/2 chicken (sliced)
- 1 onion (medium size)
- 4 tomatoes
- 2 artichokes
- 2 or 3 garlic cloves
- 1 green pepper
- 100gr (3,5oz) peas
- 6 handfuls of rice
- Some parsley
- 1/2 cup of white wine
- 1 litre water
- 1 bay leaf
- Some ground pepper
- Some cumin
- A little bit of saffron powder
- Olive oil
- Salt
- 2 stock cubes

First prepare 'the mashed' by putting 2 or 3 garlic cloves, ground pepper, cumin and parsley in a pestle and smash it well.
Next put some oil on a 'paella pan' over medium heat and once it is hot add the sliced chicken. Cook until slightly brown and add 2 garlic clove and a bay leaf. Stir it until it turns golden brown.
Once the chicken is cooked add half cup of white wine and wait until the alcohol evaporates. Then add the sliced onion and green pepper and cook everything until the onion is soft. Next add the artichokes and peas, give it a good stir and add the peeled and chopped tomatoes. Cook everything until it looks like a sauce.
Then add the rice, give it a good stir and add 'the smashed'.
Stir it again and add 1 litre of water using the same pestle where 'the smashed' was prepared to take all its taste. Once the water starts boiling add the saffron and the stock cubes.
Keep it over medium heat for around 20 minutes and taste it for salt (add if necessary) once the rice is almost cooked put the paella aside and let it sit for 10 minutes.
