Octopus paella

This week we bring you a typical Spanish recipe with the special touch of Grandma Rosa.

To prepare octopus paella for 5 people we will need:
  • 1 Kg (40 oz) of octopus.
  • Half onion.
  • 2 green peppers.
  • 150 g (5 oz) of small 'Lima beans'.
  • 3 tomatoes.
  • Rice for 5 people.
  • Peas (optional).
  • Artichokes.
  • 1 red pepper.
  • 1 bay leaf.
  • A pinch of salt.
  • Prawns to taste.
  • A pinch of cumin.
  • Ground pepper.
  • 3 garlic cloves.
  • Some parsley.

Ingredients for octopus paella
Ingredients

Put the octopus on a 'paella pan' over low heat until all its water is out. On the meanwhile prepare the  'mashed' that we will need later. For that put the cumin, the ground pepper, the garlic cloves (peeled) and the parsley in a pestle and smash it until it looks like the next picture.

Once the octopus' water is out throw out that water, put the octopus apart and clean the pan. Once cleaned add some oil and put the octopus back, give it a good stir and add the onion and the peas. Once the onion is soft add the pepper and the 'Lima beans'. When the beans are soft add the tomatoes.

Leave it cooking over medium heat until it looks like a sauce. Then add the rice, give it a stir and add the 'mashed' we made earlier, give it another good stir and add the water using the pestle so we get all the flavours.

When the water starts boiling add the prawns.

When the prawns are cooked it is ready to eat.
