Octopus stew


This Easter we brought you this Spanish seasonal recipe. This recipe needs a bunch of ingredients, but it's really easy to cook. Hope you enjoy it during this holidays.

The necessary ingredients to prepare this recipe for all the family are:
  • 3 raw octopus legs (sliced)
  • 200gr (7oz) chickpeas
  • 200gr (7oz) dried beans
  • 100gr green peas
  • 1 tomato
  • 1 onion
  • 1 lettuce heart
  • 3 green chard bunches
  • 1 or 2 potatoes
  • Ground pepper
  • 1 cclove
  • 1 bay leaf
  • 1 head of garlic
  • Olive oil
  • 1 litre water
  • Salt or stock cube

The night before put the beans and the chickpeas together in a bowl with water.

On a pressure cooker* put the chickpeas, the beans, the sliced octopus and a litre of water over medium heat without covering the cookerWhen it starts boiling take out the spume on the top of the water.

Over the next 20 minutes leave it boiling over medium heat without covering the cooker and keep taking out the spume.

Next add all the vegetables, some oil and salt (or two stock cubes), close the cooker and once it starts whistling leave it for 20 minutes more.

Finally, turn of the heat and wait until the cooker can be opened, open it and put it over medium heat again. When it starts boiling again keep it over low heat for 10-15 more minutes, give a shake some now and then.

* You can do it on a normal cooker, follow the same process but leave it over low heat until everything is tender.
