Octopus in sauce

Today we brought you a 'special recipe'. This special recipes are not as easy as our usual recipes but they are extremely tasty. Today's special recipe is a Spanish dish that you can only enjoy here in Spain... or cook it by yourself following this recipe.

For a nice platter you will need:
  • 1,5 Kg (52 oz) of octopus.
  • 1 big onion.
  • 2 or 3 ripe tomatoes
  • 1 garlic clove
  • Some pepper grains
  • Cumin
  • 1 bay leave
  • Salt
  • Oil
  • Ground paprika

We will start by slicing the octopus in small pieces putting it into a frying pan without oil. When the octopus have released its juice remove it from the pan and rinse it. Clean the pan an add the oil. When the oil is hot put the octopus back, stir it and add the onion minced, the tomatoes peeled and chopped, the garlic minced and the bay leave. Also add the pepper grains and the cumin previously crushed, and a pinch of salt.

When the tomato and the onion are tender, add a glass of white wine and a pinch of ground paprika. When the wine's alcohol evaporates add a glass of water and when it starts boiling low the heat and let it cook over low heat for 30 minutes.
To check if it is ready you can taste an octopus piece to see if it is tender.
